Low Sugar Blueberry Jell-o Salad: A Refreshing and Guilt-Free Treat

Ingredients:

Filling:

  • (2) .3 oz boxes sugar free jello – (I use sf black cherry)
  • 1 c boiling water
  • 1 c cold water
  • 1 can crushed pineapple, no sugar added, drained (20 oz)
  • 1 can of sugar free pie filling or substitute with sugar free blueberry compote

Topping:

  • (1) 8 oz pack cream cheese, softened
  • 3/4 c sour cream
  • 1/2 c Granulated Swerve (or preferred sugar substitute to taste)
  • 1 tsp vanilla extract
  • 1 c chopped pecans

Instructions:

  1. For the filling – pour jello mix into boiling water and stir until completely dissolved. Stir in cold water.
  2. Drain pineapple and add to mixture. Then add pie filling/compote and stir until combined.
  3. Pour into 9×11 dish. Chill until set (3-4 hours)
  4. For the topping – mix all topping ingredients until combined, except for the pecans.
  5. Spread topping on chilled mixture. Sprinkle pecans on top.
  6. Chill until ready to serve.
