Ingredients:
Filling:
- (2) .3 oz boxes sugar free jello – (I use sf black cherry)
- 1 c boiling water
- 1 c cold water
- 1 can crushed pineapple, no sugar added, drained (20 oz)
- 1 can of sugar free pie filling or substitute with sugar free blueberry compote
Topping:
- (1) 8 oz pack cream cheese, softened
- 3/4 c sour cream
- 1/2 c Granulated Swerve (or preferred sugar substitute to taste)
- 1 tsp vanilla extract
- 1 c chopped pecans
Instructions:
- For the filling – pour jello mix into boiling water and stir until completely dissolved. Stir in cold water.
- Drain pineapple and add to mixture. Then add pie filling/compote and stir until combined.
- Pour into 9×11 dish. Chill until set (3-4 hours)
- For the topping – mix all topping ingredients until combined, except for the pecans.
- Spread topping on chilled mixture. Sprinkle pecans on top.
- Chill until ready to serve.
