Pecan Pie Bread Pudding – A Sweet Spin on Two Classic Deserts!

Pecan Pie Bread Pudding

Ingredients

  • 16 oz loaf of day-old French bread (or fresh bread, lightly toasted)
  • 2 1/2 Cups milk
  • 1 C heavy cream or half & half (or sub more milk)
  • 4 large eggs
  • 1 C granulated sugar
  • 1 TBSP vanilla
  • 1/4 tsp salt
  • 1 C butter, softened
  • 2 C chopped pecans
  • 3 C packed brown sugar

Directions

  1. Preheat oven to 350°F and grease an 8×8 pan
  2. Cube bread & place in large bowl
  3. In another bowl, beat the 4 large eggs. Then add 2 1/2 C milk, 1 C heavy cream, 1 C sugar, salt & vanilla until well combined. Pour mixture over bread and allow to sit for 5-10 minutes.
  4. In another bowl, combine the 1C softened butter, 2 C chopped pecans, and 3 C brown sugar with a fork. Keep mixing until mixture is the consistency of wet sand.
  5. Pour half of the bread mixture into prepared 8×8 pan.
  6. Smooth half of the pecan mixture onto the bread mixture.
  7. Spoon remaining bread mixture over top, then top with remaining pecan mixture.
  8. Place 8×8 pan on top of foil lined cookie-sheet to catch any overflow, and bake 45 to 55 minutes, until pudding is only slightly jiggly.
  9. Serve warm with whipped cream or ice cream if desired.
