Pecan Pie Bread Pudding
Ingredients
- 16 oz loaf of day-old French bread (or fresh bread, lightly toasted)
- 2 1/2 Cups milk
- 1 C heavy cream or half & half (or sub more milk)
- 4 large eggs
- 1 C granulated sugar
- 1 TBSP vanilla
- 1/4 tsp salt
- 1 C butter, softened
- 2 C chopped pecans
- 3 C packed brown sugar
Directions
- Preheat oven to 350°F and grease an 8×8 pan
- Cube bread & place in large bowl
- In another bowl, beat the 4 large eggs. Then add 2 1/2 C milk, 1 C heavy cream, 1 C sugar, salt & vanilla until well combined. Pour mixture over bread and allow to sit for 5-10 minutes.
- In another bowl, combine the 1C softened butter, 2 C chopped pecans, and 3 C brown sugar with a fork. Keep mixing until mixture is the consistency of wet sand.
- Pour half of the bread mixture into prepared 8×8 pan.
- Smooth half of the pecan mixture onto the bread mixture.
- Spoon remaining bread mixture over top, then top with remaining pecan mixture.
- Place 8×8 pan on top of foil lined cookie-sheet to catch any overflow, and bake 45 to 55 minutes, until pudding is only slightly jiggly.
- Serve warm with whipped cream or ice cream if desired.
